In Edinburgh, Scotland, there is a company called Koji Kitchen that specialises in using koji to create unique, fermented dishes. Koji Kitchen was founded by Robin Sherriff, who has been experimenting with fermentation for years now. Miso Making Education

Koji Kitchen's miso-making kit includes everything you need to make your own miso at home. The kit includes 300g Organic Koji, 300g Organic Soybeans and 60g Sea Salt.
